unbaked 9 inch (23 cm) pie crust

Bake pie crust in preheated 400 F (200 C) oven for 10 minutes. Remove from
oven and sprinkle hot crust with 1/2 cup (125 ml) mozzarella cheese and set
aside.
Turn oven down to 375 F (190 C).

Cut tomatoes into chunks and set in colander to drain. Cut basil leaves into
thin strips and mix with tomatoes. Add garlic. Put tomato mixture into the
baked pie crust and sprinkle with salt and pepper to taste. Mix together the
rest of cheeses and mayonnaise; spread all over tomatoes, working it out to
the edges. Bake for 40 minutes at 375 F (190 C).
